I put out an inquiry for what you gals want more of and one of the request was more LUNCH ideas. I tend to give you tons of tips and ideas for dinners and quick easy breakfast foods but lunches get thrown to the way side. Precisely why I am giving you 10 delicious lunch ideas for the week!
- Lettuce Wraps with sautéed garlic shrimp
Sautee shrimp in pan with dairy free butter, garlic, salt and pepper and a squeeze of lemon. Serve over top a romaine lettuce leaf and a sprinkle of feta cheese.
- Teriyaki meatball in gluten free wrap
I love the Adeilis teriyaki turkey meatballs. Heat up in skillet until crisp on the outside. Serve in a gluten free wrap with a handful of spinach and drizzle of ranch.
- Turkey meatloaf muffins
In a large bowl combine 2 lb ground turkey, 2 eggs, 1 cup quick cooking oats, ½ tsp cumin, ½ tsp thyme, 2 tsp pepper, 1 tsp salt, 2 tbsp garlic powder, 1 small onion and 2 celery stalks. Place rolled up balls in a muffin tin and bake 40 min at 375.
- Dairy free chicken salad
I keep shredded rotisserie in a bowl. Take a large handful and place in bowl with 15 halved grapes, 1 celery stalk chopped, ½ avocado and salt and pepper to taste. Stir with a spoon until avocado is smashed. Serve on lettuce wrap or eat straight out of the bowl!
- BLT Salad
Romain lettuce, diced tomato, diced cucumber, crumbled pieces of cooked bacon, red onion slices if you like, drizzle of ranch and I have even added a burger patty to mine before!
- Coconut Chicken with Zoodles
Using a spiralizer, make zoodles and set aside. Cut 2 chicken breast into 6 tenders, season both sides with salt and pepper, dip tenders into egg wash then coconut flour then coconut flakes. Do this until all are completely covered. Bake 20 min each side. Serve over top the zoodles with a squeeze of lemon.
- Salmon burgers
I buy these pre made in the seafood section at the grocery store. I sear on both sides and serve with a steamer bag of veggies. Super easy and these patties re-heat very well!
- BBQ Chicken pizza
Using a gluten free tortilla wrap, thin layer of BBQ sauce, handful of rotisserie chicken and a sprinkle of cheddar on top. Heat in oven until crisp on edges.
- Loaded sweet potato fries
Using the chili from below- serve over top a small plate of baked sweet potato fries. These are best homemade and sliced, drizzled with olive oil and sea salt.
- Chili bowl
In a crockpot- 2 lb ground turkey, 1 onion diced, 3 cloves garlic minced, 1 red 1 green bell pepper diced, 1 cup carrots diced, 1 jalapeno, 28 oz can crushed tomato, 14 oz diced tomato, 15 oz can tomato paste, 3 tbsp chili powder, 1 tbsp oregno, 1 tbsp basil, 2 tsp cumin, pinch of salt and pepper. Cook on low for 6 hours.
