Are you ever looking for new and refreshing Crock pot ideas?  We as humans eat the same 32 foods every week.  For me, I feel like I eat the same 10 foods every week.  As a mom, I have 5 go-to recipes for the crockpot and it never fails that come Fall, we are eating these 5 meals much more frequently!

Some times you have a BOMB recipe that you make in the crockpot and after 2-3 times, you are completely burnt out of it.  It taste bland, there’s no wow factor to it and your family sure as hell isn’t going to eat it.  Been there, done that.  However, when you do find those recipes that are timeless, so delicious each time you fix it and  evolve into new taste as you make it, those become your “Go- To’s”.

I’ve got 5 recipes that are my “go-to” when it comes to a fast, easy and DELICIOUS dinners that I know my family will love.  Keep these in your go to bank because if you end up in a pinch of what to fix for dinner OR needing something that’s a dump and go, these 5 Crockpot meals will be your savior!

Pot Roast


3 lb of boneless beef chuck roast (a little more fat on it gives a great flavor)

2 cans cream of mushroom

2 cups of carrots whole

1/2 onion diced

1 lb of potatoes washed and halved

1 can water

1 package of onion soup mix


Mix everything in the crockpot and cook on high for 6 hours.  If you like your potatoes a little more firm, save them and add with 2 hours left to cook.

Creamy Chicken and Green Beans


4 chicken breast

1 box stuffing mix

1 can cream of chicken soup

3/4 cup sour cream

12 oz bag of frozen green beans


Spray with nonstick cooking spray. Place chicken in bottom of crockpot (add salt and pepper to taste), layer with stuffing mix.  In. a separate bowl, mix sour cream and soup mix together, spread over top the stuffing mix.  Top with green beans and cook on high for 4 hours. (Ive even added parmesan cheese to the top to add an extra crunch!)

Spicy Chili


1lb ground beef

1 can diced tomato

1/2 tsp chipotle powder

1/2 tsp garlic powder

1 green pepper diced

1 can kidney beans

1 can chili beans

1 small onion diced

2 jalapeños diced

8oz can tomato sauce

2 tbsp chili powder

Salt to taste

1 tsp sugar

1 tbsp apple cider vinegar


Brown beef, onion and peppers until cooked through.  Drain and place in crockpot.  Add remaining ingredients to crockpot and cook on low for 4-5 hours.  Serve with sour cream, cheese and chopped chives.

Breakfast Casserole


1 dz eggs

1/2 cup milk

2 cups shredded cheese

1 lb browned sausage (I like the smoked flavor)

*optional to add mushrooms, green peppers, red peppers, onion, hash brown, spinach (I would do 1-2 handfuls of whatever you like)


Spray the crockpot with nonstick cooking spray.  Combine all ingredients and stir.  Top with a sprinkle of extra cheese.  Cook on low for 6 hours.  Breakfast is served!

Chicken Tortellini Soup


1 rotisserie chicken pulled (should give you a good 1 1/2 lb of chicken)

1 cup of diced carrots

3 small celery stalks diced

1 medium onion diced

3 cloves garlic minced

6 cups of chicken broth (I use the low sodium)

1 cup of water

2 cups of cheese tortellini

salt and pepper to taste


Add all ingredients to crockpot except the tortellini and cook on low for 4 hours.  Add in tortellini and cook for another 45 minutes. Season with salt, pepper and parsley to taste.
